Recipe Ingredients

  • 1½ cups crushed gingersnap cookies
  • ¼ cup melted butter
  • 1 tbsp sugar

  • 16 oz cream cheese, softened
  • ½ cup sugar
  • 2 eggs
  • ½ cup eggnog
  • 1 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • ½ tsp ground nutmeg
  • ¼ tsp cinnamon

Optional topping:

  • Freshly grated nutmeg or whipped cream

Step-by-Step Instructions

  • Preheat oven. Preheat to 325°F (160°C). Line an 8×8 or 9×9-inch baking dish with parchment paper.
  • Make the crust. In a bowl, combine crushed gingersnaps, melted butter, and sugar. Press firmly into the bottom of the prepared pan. Bake for 10 minutes, then let cool.
  • Make the filling. In a large bowl, beat cream cheese and sugar until smooth. Add eggs, one at a time, then mix in eggnog, flour, vanilla, nutmeg, and cinnamon. Mix until well combined.
  • Bake. Pour filling over the crust and smooth the top. Bake for 35-40 minutes, or until the center is just set. Let cool at room temperature.
  • Chill and serve. Refrigerate for at least 3 hours before slicing into bars. Top with grated nutmeg or whipped cream if desired.
